Garlic Dijon Salmon

Ingredients

  • 1 pound wild caught salmon filets
  • 4 tablespoons (one big smear per filet) Dijon mustard
  • 4 whole garlic cloves, roughly chopped
  • 2 sprigs fresh rosemary, roughly chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Yield: 2 Servings

Gerrit began cooking this dijon salmon for our friends in college and it continues to be a staple in our house. The prep and cook time are quick and simple but the flavors are bound to impress your guests. Perfect for a busy week night or hosting a dinner party.

Directions:

Pre-Heat oven to 400 degrees.  Heat olive oil in cast iron pan.  Use 1 drop of water in oil to obtain a “sizzle” to make sure oil is hot enough prior to placing salmon in pan.  Season Salmon with salt and pepper.  Place salmon skin-side-up in griddle for 3 minutes, turn and place skin side down and smear the seared (non skin side) salmon with Dijon mustard. Sprinkle with chopped garlic and rosemary then immediately place entire cast iron in pre-heated oven for 5 minutes.

Remove cooked salmon from oven.  Serve immediately.
