Blackened Grouper with Grilled Veggies & Lemon Aoili

Ingredients

  • 3/4-1 pound wild caught grouper
  • 1 1/2 tsp blackened seasoning
  • 1 lemon
  • 2 tbsp olive oil
  • For the Grilled Asparagus & Red Bell Pepper:
  • 1 large red bell pepper
  • 1 pound asparagus
  • 1/2 tbsp balsamic vinegar
  • 1 1/2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp pepper
  • For the Lemon Aoili:
  • 2/3 cup mayonnaise
  • 1 tsp lemon juice
  • 1/2 tsp lemon rind
  • 2 garlic cloves minced
  • Salt & pepper to taste
Yield: 2 Servings

Blackened Grouper:

Preheat oven to 350 degrees. Rinse grouper and pat dry with paper towels. Season both sides with blackened seasoning (You can find blackened seasoning at most grocery stores. *If you’d like to make your own, see recipe a the bottom of the page.*) Heat olive oil in a skillet on high heat (I prefer cast iron) until oil is shimmering and place grouper in simmering pan. Cook until golden brown on each side (about 3 minutes) and then place in preheated oven for another 2-4 minutes until cooked through. Top with lemon aoili and a squeeze of fresh lemon.

Grilled Asparagus & Red Bell Pepper:

Preheat grill for high heat.

Clean asparagus and bellpeppers. Remove the stems and seeds on bellpeppers and cut into strips lengthwise. Brush olive oil to cover both asparagus and bell peppers and season with salt and pepper.

Grill over high heat for about 4-8 minutes (flipping halfway), or desired tenderness. Total time will vary based on your grill. Remove from grill, place on a platter, and drizzle with balsamic vinegar (if preferred).

Lemon Aoili: Combine 2/3 cup mayonnaise (I prefer Primal Kitchen’s Mayo) with 2 minced garlic cloves, 1 tsp lemon juice, 1/2 tsp grated lemon rind, salt and pepper to taste.

If you’d like to make your own Blackened Seasoning: Combine 3 tbsp smoked paprika, 2 tsp onion powder, 1.5 tsp salt, 1 tsp garlic powder, 1 tsp black pepper, 1 tap dried thyme, 1.5 tsp cayenne pepper, 1 tsp dried oregano.
