Smashin’ Potatoes

Ingredients

  • 2 pounds baby Dutch potatoes
  • 1 1/4 tablespoons sea salt
  • 4 tablespoons olive oil
  • 4 teaspoons fennel seeds
  • 1/4 tablespoon pepper
Yield: 4 Servings

There is simply no better way to enjoy a potato! These crispy, smashin’ potatoes are easily one of my favorite side-dishes. The fragrant and distinctive taste of fennel seeds take this dish to the next level. It’s the perfect side-dish after a frustrating day at work or an exhausting night with the kids, because there’s nothing more satisfying than smashing some boiled potatoes. 😂 They’re also quick and easy to make, always a hit, and perfect for busy nights with family or wowing guests at a dinner party. They’re what I like to call “low effort, high impact.”

Directions:

Clean and rinse potatoes under running water. Fill a large pot with water and bring to a boil. Add one tablespoon of salt to the water and boil over medium-high heat. Continue cooking until the potatoes are easily pierced through by a fork (20-25 minutes).

While the potatoes cook, preheat the oven to 425 degrees Fahrenheit. Smash potatoes with the bottom of a saucepan and then drizzle one tablespoon of olive oil over a large, rimmed baking sheet. Baste with olive oil so it is evenly distributed. Top potatoes with sea salt, pepper, and  fennel seeds to taste. 

Bake for about 25 minutes in the oven, until the potatoes are a nice golden brown. Enjoy with your entree of choice.
